Homemade Vanilla Custard

Serves: 3 cups
Ingredients
- 200mL cream (double)
- 700mL whole milk
- 4 large egg yolks
- 3 Tbspn cornflour (cornstarch)
- 200g caster sugar
- 2 tspn vanilla extract
Instructions
- Put the cream and milk into a large pan and gently bring to just below the boil.
- Whilst waiting, whisk the egg yolks, cornflour, sugar and vanilla in a large bowl.
- When the cream mixture is ready, slowly pour it over the egg mixture, making sure to constantly whisk as you pour.
- Once combined, pour the mixture back into the saucepan and put it back on a low heat.
- Heat gently, stirring with a wooden spoon, until the custard is thickened nicely but before any lumps form.
- Eat straight away, or leave to chill in the refrigerator for up to 1 week.
